I do not have a 5S yet in the US, but if I go to Settings>General>Keyboards>Add New Keyboard, I get the choices of Chinese-Simplified Pinyin; Chinese-Traditional Pinyin. Those are the only 2 choices I see on my US iPhone 4S. Not sure if this is one you are referring to or not...
