Why this private IP only range 172.16.0.0 - 172.31.255.255 ?

i understand subnetting very good but my question again :- when we subtract from (255) and when we subtract from (256) ??? that is my question and i need understand this point If you subtract the subnet size, you have to subtract from 256. Sorry, i have not much time at the moment...
